Ingredients:
- 1 1/2 cups almond flour
- 1/8 tsp salt
- 3/4 tsp baking soda
- 1 tbsp coconut oil (melted)
- 2 eggs
- 1/2 tsp of pure vanilla extract
- 3/4 cup bananas, mashed (roughly 2)
- 3/4 cup blueberries
Directions:
- Preheat oven to 350 degrees.
- Mix together the flour, salt and baking soda.
- In smaller bowl - mix together the coconut oil, vanilla and eggs.
- Add the egg mixture to the dry ingredients and stir.
- Stir in the bananas and gently fold in the blueberries.
- Divide equally into lined muffin pans (makes 9).
- Bake for 30 minutes, until toothpick comes out mostly dry.
- Devour 2 muffins before they are completely cooled off they taste the best fresh and warm out of the oven!
Containers: 2 muffins Roughly 1 purple and 1 blue
